Now in its 14th edition, Hotel Matilda turns its gaze toward those who hold the invisible threads of culture: local creators, untold memories, and the fragile beauty that makes us human.

Chef Israel Loyola
This year’s story is led by Chef Israel Loyola, a proud Oaxacan whose cuisine is an expression of identity. Born in Huajuapan de León, Loyola trained between the roots of his homeland and the avant-garde kitchens of Mexico City and France. He is the founder of El Parián Atelier, a culinary space that fuses French technique with the soulful flavors of Mexico.
But this return to Moxi’s kitchen carries a profound sense of triumph — because months ago, Chef Loyola was diagnosed with stage 4 biphasic synovial sarcoma. A devastating blow that he transformed into strength. He chose not to surrender, but to rise — to return to the stove and cook the most iconic dinner of the year.
Featuring the work of Betsabeé Romero
In parallel, Betsabeé Romero, one of Mexico’s most acclaimed contemporary artists, will create a site-specific installation for the evening. Her work will not simply decorate — it will intervene, transforming each space into a living narrative.
Through ceramics, tinwork, candle artistry, and traditional bread-making, Betsabeé seeks to dignify the artisans of Guanajuato — to give visibility to a local craftsmanship that too often remains overshadowed, even in one of Mexico’s artistic capitals.
Every corner of Hotel Matilda will become part of the story — a dialogue between light, matter, and meaning. A contemporary tribute to the artisans who give texture and soul to this land.

About the Event
The dinner will feature a wine pairing by Domecq and Casa Dragones, including a welcome cocktail and a few delightful surprises along the way. Live music by Coco Zaragoza, from Guadalajara, will weave sound and emotion into every moment of the experience.
